MasterChef @ roots

The MasterChef Episode which aired on the 3rd April was recorded on location at roots@Forum Homini. We were very privileged to have the MasterChef SA team shoot at the hotel for their third episode. The task was to get back to their roots and cook on an open fire. The challenge was to cook something that was worthy to appear on the roots menu.

To braai in South Africa is to truly experience this country. Across race, language, region and religion, all South Africans share one common heritage – cooking over an open fire. Ingredients may differ to braai from lamb, beef, pork, fish and some even braai vegetables like corn (maize/mielies), but the one thing that never changes is, when we have something to celebrate - we light fires, and prepare great feasts.

LWAZI - MasterChef SA 2012 Contestant

A man who knows his way around a fire, Lwazi, supplies some tips for cooking different foods over an open fire. Ever wanted to know how to braai unusual ingredients like, Quail, Ostrich and Asparagus? Lwazi, eloquently gives very handy tips when cooking these three different items on an open fire. ALLISTAIRE LAWRENCE - Executive chef roots

Make sure you have enough warm coals prior to putting the meat on. Spice the meat with dry spices and only put the marinade on just before your meat is done to prevent the fire from burning the marinade."

"My favourite marinade is a mixture of olive oil, salt, pepper, BBQ spice and a little bit of Balsamic Vinegar or Worcester sauce. Chopped garlic, chillies or a drop of Tabasco is a good option to add a bit of flavour. Very important: Never touch another man's braai, unless requested to do so and then only to assist. Never take over! Have fun and enjoy your braai"
