The rebirth
Story of dough at roots...

From the age of eight, I spent my life working and creating in kitchens, I call it my “gift from God”, as it has made me who I am today.

I have been fortunate enough to have had a great Grand Mere (Grandmother) and an Uncle like no other. They have both done all that is possible and so much so that I strive to keep our family traditions alive. I have taken advantage of both my gift and heritage, which enabled myself and my family to experience a fantastic life. At the age of 40, I began to realise that a very important family legacy was given to me for a purpose and that is, to share with others. The legacy I refer to is creating our own bread.

Nothing in our family tradition is as important as bread. Bread is alive, it is something that should be cared for in order to obtain a quality “Miche de Pain” (cooked dough). I have told you about my “Grand Mere” bread story some 2 years ago, and I would like to touch on it again. But, before you read the story, I wish to remind you that I have started a new “Levain” (starter dough) 3 years ago and I have recently discovered a fantastic South African flour from Eureka Mills. With team effort we have managed to improve the original recipe and method of preparation and this is the reason for calling this bread “The rebirth”... read more

Lazy Saturday brunches at roots

Brunches have become a popular excuse for getting out of the city after a lazy start to a Saturday morning.

Offering an enticingly original 5-course brunch menu, a typical roots brunch would start with a freshly squeezed fruit juice and sparkling wine followed by a fruit smoothie paired with chocolate coated seasonal fruit, delicate poached eggs enclosed in hollandaise sauce served alongside a rosette of bacon and a perfectly prepared salmon fillet served on a wedge of polenta, topped with a delectable prawn.  Ending off this delicious brunch are freshly baked miniature pastries served with a sumptuous homemade jam and a plunger of robust filter coffee or a refreshing pot of tea.

roots is a must-do for city slickers looking for an extraordinary brunch experience.
